I am FINALLY sitting down to type up my menu for the week. Ironically, I planned my menu earlier than normal, but I am just finding the time to write it down for you all. Of course, I always start by looking what I have in the fridge, freezer and pantry so I can plan meals around items I already have. I also look at the upcoming week to determine how much time I’ll have to cook each night or if I’ll need any easy prep meals on certain days.
This week I needed an easy dinner for Monday night. The weekend was slammed with activities, and I knew I would need to be able to throw dinner together quickly for Monday. Monday’s meal is rebate app inspired! It’s also super inexpensive, so it helps me balance the cost of this week’s meals, overall.
Simulate nuggets (for the boy), Rice and Asparagus
I’ll just have rice and veggies, but he likes those nuggets and I got them for FREE! The simulate nuggs have a BOGO offer on Ibotta at Target- double check and make sure it’s still there! Ground Turkey with Potatoes and Spring Peas
I haven’t made this recipe in a while, but I remember it being delicious. It calls for fresh peas, but I’ve always used frozen and it’s still awesome.
This recipe has a TON of veggies and I love it! It’s also made with coconut milk, so it’s incredibly filling. Once you click on the link, scroll down until you see the “curry bonanza” recipe. I typically serve this over rice.
Vegan Sweet Potato Quesadillas
I picked this recipe because I got a great deal on tortillas lately and wanted to find a use for them. They are refrigerated tortillas, and I’ve never tried them. These veggie-filled quesadillas look delicious, but I’ve never made this recipe before. Stay tuned for my opinion on the result.
Vegan Roasted Veggie Orzo Salad
This is another new recipe for me and I’m so excited to try it. I love all the veggies in it, so I’m thinking it’s going to be delicious!
