This is my FIRST post on my weekly menu. Many people have said they want to see what I’m making for my family each week. I do my best to balance health and cost as I prepare my menu for the week.
Of course, I am also managing the different food preferences within my home. I prefer vegetarian meals, whereas my husband prefers non-vegetarian. And my son? He’s just picky. So, you can probably look through the meals and determine what preference I’m catering to.
On the Menu This Week
Chicken Noodle Casserole
I chose this one because I just got the egg noodles from Walmart with an ibotta rebate. I had mixed veggies in my freezer, and I’m trying to use what I have on hand. Also, my husband LOVES meals like this. My son enjoyed it, too. Although, he would have preferred it without the vegetables. I decided to purchase a rotisserie chicken for a quicker meal prep. I used half of it in this recipe and will use the other half in the Pita’s I’m making in a couple days.
Veggie Burgers, Fries and Salad

Update: Just made this last night and wanted to provide an update. I did NOT like the veggie burgers at ALL. Now, I am not a “veggie burger” person to begin with, but I got a great deal on them and wanted to give them a try. Well, they are NOT for me.
Luscious Lima Bean Soup & Healthy Chicken Pita
I absolutely LOVE this lima bean soup. Everyone is always like “lima bean soup?” Really? All I can say is it is delicious. I remember I alter the recipe, but I’m forgetting how at the moment. I’ll update the post once I make it this week. I plan to soak the beans tonight and make it on Tuesday. It makes the house smell AMAZING as it cooks!! Since the soup is more for me, I paired it with the pita sandwiches, too!
Update: I found my recipe and this is how I alter the soup. I don’t use the bouillon cubes. Because of that, I use 4 cups of veggie broth and 4 cups of water instead of the 8 cups of water. that is called for I also add a can of diced tomatoes, a bay leaf during cooking, and some thyme.
Salmon, Couscous & Green Beans
No fancy recipe for this one. I marinate the salmon in store bought Teriyaki sauce and bake it in the oven. My son LOVES the Near East pearled couscous and I’ll steam some green beans. This is a rotating staple in my home. We all enjoy Salmon and veggies.
Black Bean Sweet Potato Chili
This recipe is so yummy! I actually follow this recipe exactly as it is written! I haven’t even looked at the weather forecast, I’m just going to pretend it’ll be cool enough to enjoy some veggie chili in a big bowl!
Update: I always add avocado on top. Cheese it another great addition!
