My Weekly Menu 10/2-10/8

Hey there! It’s Sunday, and I’m writing up my plan for the week. As you can see below, I incorporate some of the couponing finds I got last week and some of the ingredients I purchased for last week’s dinners.

You will notice I will sometimes use similar ingredients. For instance, last week I bought a bag of sweet potatoes and I used some of sweet potatoes in the chili last week. Because I still have some left over, I decided to make the balsamic veggies recipe for this week because I wanted to use what I had. Wasting food is just wasting money, so I try to make sure I use everything I buy.

Impossible Burgers with Balsamic Roasted Vegetables

I selected the balsamic roasted veggies to make sure I used up all the veggies we had on hand. You can use whatever veggies you want in this recipe. I ended up using brussels sprouts, greens beans (I still had some left from last week), red and green bell peppers, red onion, and sweet potatoes. I could honestly top that with avocado and serve with a side of rice and call that a meal. However, I also made impossible burgers and we had peaches for dessert. This was an incredibly affordable meal because I got the “meat” from a previous Swagbucks deal, I used the Keto buns we got for FREE at Walmart last week, and also the pickles I got at Target with a Shopkick deal a while back.

Curry Roasted Vegetable and Avocado Naanwich

So, I know this recipe technically calls for Naan, which is delicious. However, I have the leftover pita bread from last week’s recipe, so I’m using that instead. Again, using what I have prevents waste and saves my family money! I’ve made this recipe a number of times before and I love it! I follow the recipe as written and we love it! The zucchini I purchased is huge, so I plan to use that later in the week, too.

Ground Turkey Tacos

Happy National Taco Day (Oct 4th)! I’m not going to lie, I am going to be very tempted to go out and get amazing tacos from a restaurant on National Taco Day. But, I’ll be making these at home instead. I don’t actually follow a recipe when I make tacos, but I included one above if you like a step-by-step recipe. I will be using taco shells and taco seasoning I purchased on BOGO sale at Walgreens, as well as beans I got for FREE at HEB using the ibotta app. I’ll make vegetarian tacos for myself and I’ll probably serve this with some leftover balsamic veggies I made a couple days ago.

Pasta Pomodoro with Shrimp – Kim’s Cravings

This is a new recipe for me, so I’ll have to come back and give you an update on what I thought. Shrimp and pasta are two of my son’s favorite foods, so I’m hoping this is a win! We prefer fresh shrimp, but I always have frozen shrimp on hand for a quick dinner. I’m also planning to ask my friend if I can use some fresh basil from her garden!

Update: Loved this simple recipe. I bought some delicious tomatoes which made it perfect!

Crunchy Thai Salad

This is another new recipe I’m trying out this week. It sounds delicious and cant wait to try it! I was planning to make a different meal this week, but I cannot find the recipe online anymore. I’ll have to make that on a week where I have time to upload the recipe for you guys.

Update: This was so good! One thing I had not noticed, this recipe is for one serving! I started making the dressing and quickly realized it didn’t seem like enough. Even if I’m only making dinner for myself, I like to have leftovers! So, I doubled the recipe and it was perfect for one dinner and a hearty serving for leftovers. The dressing was delicious. I loved the heat from the crushed pepper spice.
