My Weekly Menu 10/9 – 10/15

I sat down on Saturday morning to write my meal plan for the week. I always start my looking at what’s in my fridge and my pantry that I might be able to use. Armed with that knowledge, I headed over to my old pinterst page to look at some of the recipes I’ve made before and some I’ve marked as “recipes I need to make.” Here’s what I’m thinking for this week:

Roasted Cauliflower and Black Bean Tacos – Gimme Some Oven

I had some cauliflower in the fridge and some leftover tortillas, so I was searching for a cauliflower taco recipe. I came across this recipe and it looks delicious. Plus, one of my favorite energy bites recipe is from this same site. This will be a new recipe for me, so I’ll come back and update with my thoughts after I make it.

I am NOT a chef, and barely enjoy cooking. So, I’m not typically a fan of recipes that have recipes within them. For instance, this recipe has you make the refried beans from scratch (which, from a taste and health perspective I prefer) BUT, it also has you make the “crema” from scratch, too. Look, recipe, I’m not Julia Child; the fewer dishes I have to make dirty to create my dinner, the better. So, let’s just see how this goes. I have a habit of altering recipes to my taste preferences and the time I have available to cook/clean up.

Update: This was so good! I used a bag of SOMOS refried beans I had gotten from FREE from HEB and fro the crema I took sour cream and added lime zest and thinned it out with water.

Breakfast for Dinner: Eggs, Roasted Brussels Sprouts and Sweet Potatoes, and Breakfast “Sausage” 

Alright, guys. If you watch my YouTube videos, you know I just scored some Morning Star Farms “sausage” for like $.12 after the clearance sale and the matching ibotta rebate. So, I wanted to try it out and see if it’s any good. One night this week we’ll have eggs and sausage. I also have some brussels sprouts that didn’t get used last week, so I’m going to roast those up with some sweet potatoes as a side dish.

Zucchini & Hummus Pita Sandwiches

Since I have a small family, I still have some pita bread leftover from last week. I LOVE sandwiches or anything like sandwiches. I found this recipe and it sounds delicious. I also have some zucchini leftover, because the zucchini I received from my Weee! delivery is one of the biggest I’ve ever seen. I’ve been using this delivery service for a while now and it’s so convenient. I’ll be doing a price comparison of their products to my local grocery store soon.

Update: I’m in love. These were so delicious.

Honey Bourbon Chicken

I found this recipe years ago and found it saved in my Pinterest. I try to cook meat dishes at least once a week, and I remember this one being pretty good. I will likely serve it with rice and some vegetables, I just haven’t decided yet. A lot of nights I’ll also have some sort of fruit on the table for dessert.

Rumbi Rice Bowls

This is another recipe I haven’t made in years that I remember being rather delicious. How can you go wrong with teriyaki sauce and veggies?! Since it’s been so long since I’ve made this one, I promise to come back and add a few more notes once I make it again!

  1. Love the recipes! Always looking for new ideas. Made the cauliflower tacos tonight – my husband and I both loved them!! My teenage boys ate parts of them too – love expanding their “ideas” of what food should be.
