Weekly Menu 10/31 – 11/5

I’m going to be really transparent with you; I am NOT on my game this week.  With Halloween yesterday and a crazy schedule this week, I’m feeling just a bit off.

It was my plan to NOT post a “weekly menu” this week.  Why?  Well, because I’m not making anything fancy and I was a bit afraid people might be totally uninterested in my “use what I got” meals this week. But, then I got to thinking.

Maybe I SHOULD post my random, un-exciting meals for this week.  Maybe it’ll be totally relatable to some of my readers.  Maybe you are ALSO trying to feed people while also having kids in random extracurriculars from 4:30-9PM at night while you work and try to remain a sane human being.  Am I speaking to anyone else out there?

So, here’s my plan.  I haven’t even really grocery shopped for our meals this week.  The freezer has no more room, so I’m trying my best to utilize some of those items, too.

Update: I thought these were okay. Not my favorite, but definitely not my least favorite plant-based burgers. I ended up using the French fries we already had at home and then roasted brussels sprouts that I found on clearance this week.

Breakfast for Dinner

Likely I will make scrambled eggs and frozen waffles.  The waffles are Kodiak Adventure waffles I got an amazing deal on over at Target.  There is an ibotta offer and I had a Fetch Rewards offer.

Vegan Sweet Potato Quesadillas

Yes, this was slated for last week and it didn’t happen.  I ended up using the Alouette (Shopkick deal) and making a white pizza instead.  So, I will make the quesadillas this week.  

Update: These were delicious! I loved them and the Tortillaland tortillas did great for quesadillas. I still haven’t found a vegan cheese I love.

Ravioli with Veggies

The ravioli was another FREEBIE with the Ibotta app.  I will add in some veggies and store bought pasta sauce for a quick and cheap meal.

Update: I ended up running even shorter on time than I thought, so I actually just took whatever veggies I could find in my fridge and sauteed those with some pre-made pasta sauce.

So, there it is friends. A non-exciting meal plan for the week. But I’m keeping it real for ya.
