I am hoping this week is a little bit slower than last week, but a holiday week always throws me off a bit. I didn’t have the day off on Monday, but my son did.
I have a grocery delivery scheduled for Tuesday, so I’m working out of the freezer for tonight’s dinner. A couple of weeks ago I purchased the Calipower Pasta because there was a BOGO offer on Ibotta, so I’m making that for dinner tonight.
Update: I made this meal on Monday and I wasn’t a huge fan. I ate it, but I wouldn’t make it again. That being said, I know some people like the concept of Caulipower to reduce their overall carb intake. So, if that’s you, you might love it.
I thought this recipe was delicious. Since I’m not a big meat eater, I want to try this sauce again with a bunch of vegetables. However, the chicken was good and my son loved it, so I call that a win!
It has been years since I made this recipe, but I’m assuming I kept the recipe for a reason! I plan to make this tonight.
Do you ever write down all the ingredients to buy for a recipe and then forget to save the recipe? Is that just me? I had to go back to my pinterest and search and I found this. Hopefully this is the right “sweet potato and lentil chili” recipe that I bought the ingredients for. Even though it’s warming up outside, I’m still making it! I already had the lentils and the sweet potatoes, so that’s why I chose this to begin with!
